The restaurant supplies itself directly from the producers after having carefully tasted and evaluated the proposed wines.

La Vitovska: a white with a dry and fruity taste

For the selected cellar of the restaurant, Vitovska was chosen, a white berry wine common in the province of Trieste and in Slovenia. With a typical pale straw yellow color, almost brilliant, a pleasant smoothness in the glass and a fruity, vinous fragrance in youth but more silky in maturity, it will amaze you with its dry, fresh and slightly acid but full-bodied taste. It is a wine that goes well with seafood hors d'oeuvres, fish dishes and cold cuts, but is also ideal for aperitifs thanks to its delicate characteristics.

Istrian Malvasia: an aromatic white with a fruity flavor

Istrian Malvasia is a wine originating from Venezia Giulia and Istria, present on the tables of Italian nobles since 1300. It is a wine with a low alcohol content, golden yellow color, a fruity flavor and a typically aromatic smell. The taste is dry and generous, pleasant and frank. It is present in the selected cellar of the restaurant La Bottega di Trimalcione for its ability to perfectly accompany dishes with shellfish and seafood.

Teran, a red wine with a taste of history

A restaurant in Trieste could not miss the Teran or Terrano del Carso in its selected cellar, a real specialty made in Trieste, also described in a poem by Umberto Saba: “Trieste has a surly grace. If you like it, it's like a rough and voracious boy, with blue eyes and hands too big to give a flower; like a love with jealousy. "
Teran is a red wine with character, with a purplish red color that migrates towards dark ruby as it ages. It could almost be considered aggressive on the nose but guarantees a round taste that recalls undergrowth fruits, with a strong taste and particular tannins. Perfectly accompanies appetizers of local hams, roasted red meat and mature pecorino cheese: the restaurant also proposes it for the typical Triestine goulash, served around 16-17 degrees.

La Glera: a white wine also produced by the ancient Romans

La Glera is a wine whose origins are lost in antiquity, produced with vines cultivated by the ancient Romans in Aquileia and Tergestum. With its characteristic straw yellow color, it is a seemingly timid wine but with a fine fruity aroma, fine and persistent even on the palate with an almond aftertaste. It combines perfectly with sea truffles, oysters, delicate fish appetizers and white meats.
